1 cup Potter’s Long Island Iced Tea
1 1/2 cups diet cola
1/4 cup lemon simple syrup
3 envelopes Knox gelatin
28 bamboo skewers and small lemon wedges for serving
Combine the Diet Coke and lemon syrup in a medium saucepan and sprinkle with the gelatin. Allow the gelatin to soak for a minute or two. Heat over very low heat until the gelatin is dissolved, stirring constantly, about 5 minutes. Remove from heat and add Potter’s Long Island Iced Tea, stirring well to blend. Pour into a 9"x9" pan and refrigerate until fully set, several hours or overnight. To serve, cut into small circles or squares. Thread a small lemon wedge onto each bamboo skewer, followed by two small jelly shots. Refrigerate until ready to serve.
Makes 25 skewers, or about 50 small jelly shots.
