Highwood's fine Whiskies begin with small batch distillation,

followed by carefully monitored aging in charred oak barrels.

The individuality of each Whisky is born from fine distillation, careful barrel selection, and blending unique to each brand. A great deal of attention is given to the selection of grains – wheat lends to a gentle sweetness, rye a spiciness, while corn delivers a robust body. Canadian law states that our country’s Whisky shall be aged no less than 3 years. The barrels enlisted for this purpose add another element of complexity to our Whisky.

WHITE OWL WHISKY

After months of testing we introduced the first ever fully oak-matured white whisky. White Owl retains all the flavors of Canadian Whisky, while adding the cocktail-mixability of a white spirit. 

The oak flavors are mild and there is no harsh tannin or unbridled spice. Mild whisky aromas of rye and light oak with a touch of vanilla, honey and a mild licorice background rise in this bouquet.

WHITE OWL SPICED WHISKY

To our award-winning White Owl Whisky, we blend natural ingredients, including vanilla, and rich butterscotch. The result is an even smoother, longer finish, and then a spicy mix of ginger and cloves (and maybe a touch of cumin). These hot spices are never assertive enough to disturb the essence of the wonderfully light delicious White Owl Whisky flavour.

After distilling from Canadian prairie rye and wheat, Highwood's master blender sources our clean natural water then, without any additives, places the spirit in charred oak barrels where its flavour is enriched by the aging process. Years later, after verifying the flavour and body have mellowed to perfection; Highwood’s Canadian Rye Whisky is bottled for your enjoyment.

CENTENNIAL 10 YEAR OLD CANADIAN RYE WHISKY

Years ago, we entrusted the challenge of creating a smoother, richer rye whisky to our master blender. The challenge was superbly met and Centennial is the result. Masterfully crafted in small batches it features toasted flavour notes inherited from the Kentucky bourbon oak barrels it’s aged in. Centennial is presented in a beautiful, tall, sleek, imported bottle topped off with a cork cap, and elegant label.

POTTERS SPECIAL OLD CANADIAN RYE WHISKY

Awarded “the best economy Canadian Whisky” by The RumHowler who stated, “I can easily believe this is an 8 or a 10-year-old whisky, as it has none of the harshness which I associate with young whisky. A clean spicy rye is out in front carried by light oak and the combination delivers… what I can only term as old-time traditional Canadian Whisky flavour. In fact, this might just be the closest I have come to recapturing the Canadian Whisky flavour…with a light spice, and a nice soft punch of vanilla with a light accent of corn completes this nicely.”

NINTEY 20 YEAR OLD WHISKY

Is one of the oldest whiskies in Canada. We start with corn grains and after multiple distillations the creamy liquid is then placed into charred oak bourbon barrels where it quietly lays undisturbed for at least 20 years. Then, very carefully, the golden whisky is drawn and blended. Still not done, it is then aged for a further 6 months in sherry barrels to finally create a smooth, luxurious depth of flavour rich in oak, spices, and a light fruit sweetness captured at 90 proof (45% alcohol).

WILD CINNAMON WHISKY

At 36% alcohol, which is higher than the major competitor, it is bold, a little spicy, and a whole lot of smooth. Wild Cinnamon is the delicious blend of Canadian Whisky and aromatic cinnamon…perfect for your next hot night. Over ice, or ideally out of the freezer, it tastes like cinnamon hearts in a glass!

TRUE NORTH CANADIAN RYE WHISKY

Distilled from the finest western prairie wheat and grains, it’s aged in charred oak barrels for a minimum of 4 years before being blended and packaged.

CENTURY RESERVE 21 YEAR OLD CANADIAN RYE WHISKY

Masterfully cask aged for over two decades creating the ultimate premium single grain, small batch whisky. Distilled entirely from corn, and aged for a full 21 years in charred American bourbon oak barrels, this whisky has sweet aromas of orange peel, toffee, roasted almonds, all mingling with warm flavours of baking spices and vanilla. The finish is a gentle fruitiness and charred oak notes; silky and long.

NINETY 5 YEAR OLD WHISKY

Like its older big brother, Ninety 20 Year Old, this younger version follows all the same painstaking steps with the only difference being we tap the barrels a decade and a half early.  The shorter aging creates a different flavour profile. One of wood spice, dusty rye, and very light flavours of butterscotch and corn syrup. Expect a soft, smooth, sippable whisky which is finished at 90 proof (45%) giving it just a little extra bite and excitement.

SWEET SIPPIN MAPLE WHISKY

A Sippin' liquor at 22% that would surpass the stringent demands of Whisky lovers was the goal, and we’ve done it! To our best Canadian whisky we add Quebec's finest maple syrup and that's it, no additives or preservatives! And in a maple leaf shaped bottle! How’s that for Canadian, eh? Perfect in your coffee, or your suitcase for friends & family abroad who want a sweet taste Canada.

HUNDRED VOLT RYE WHISKY

At 50% alcohol you’ll get a little more charge out of Hundred Volt than regular whisky. Your electrifying experience begins with light butterscotch accented by mint and licorice. All the flavours are a little more in your face (mouth) as the higher proof not only ratchet ups the alcohol strength, but also concentrates all the whisky flavours. As with all our over proof spirits, please enjoy them with extra responsibility.

LIBERATOR

It’s all hands-on deck for the this special 5-year-old craft batch whisky as no automation is involved in the distillation process. We control each step of the process by hand, completing the creation of the alcohol one measured amount at a time. Even the labels are hand applied.
